Baja-Style Chicken Bowl
This Baja-Style Chicken Bowl is a vibrant and flavorful dish inspired by the fresh and zesty flavors of Baja California. It combines tender, spiced chicken with wholesome ingredients like brown rice, black beans, avocado, and corn for a satisfying meal.
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 1 cup corn kernels, fresh or frozen, cooked
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- Juice of 1 lime
Instructions:
In a small bowl, mix olive oil, chili powder, cumin, salt, and pepper
Coat chicken breasts with the spice mixture
Heat a skillet over medium-high heat and cook chicken for 6-8 minutes per side or until cooked through
Let chicken rest for a few minutes, then slice into strips
