Hearty Vegan Lentil Stew
A hearty vegan lentil stew packed with protein and flavor, perfect for chilly evenings.
Ingredients:
- 1 cup dried green lentils
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 potato, diced
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion, garlic, carrots, and celery
Saut until softened, about 5 minutes
Add diced potato, lentils, diced tomatoes, dried thyme, rosemary, salt, pepper, and vegetable broth
Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender
Adjust seasoning to taste, adding more salt and pepper if needed
Serve hot and enjoy!
