Green Pesto Pasta
A vibrant and flavorful pasta dish featuring homemade green pesto sauce made with fresh basil, Parmesan cheese, and pine nuts.
Ingredients:
- 300g pasta of your choice
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
Cook the pasta according to package instructions until al dente
Drain and set aside, reserving 1/2 cup of pasta water
In a food processor, combine basil leaves, Parmesan cheese, pine nuts, garlic, and olive oil
Blend until smooth, adding more olive oil if necessary to reach desired consistency
Season the pesto with salt and pepper to taste
In a large pan, heat the pesto over medium heat
Add the cooked pasta and toss to coat evenly, adding reserved pasta water if needed to loosen the sauce
Serve hot, garnished with extra Parmesan cheese and basil leaves if desired
