Greek Lamb Meatballs Whole30
These Whole30-friendly Greek lamb meatballs are a tasty and nutritious meal. The ground lamb gives them a rich, juicy texture, and the fresh herbs and spices give them a ton of flavor. These savory meatballs are a satisfying and wholesome dinner choice that fit perfectly into a paleo or Whole30 meal plan.
Ingredients:
- 1 lb ground lamb
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground paprika
- Salt and pepper to taste
- 1 egg, beaten
- Coconut oil for cooking
Instructions:
In a large mixing bowl, combine the ground lamb, chopped red onion, minced garlic, parsley, mint, cumin, coriander, paprika, salt, and pepper
Mix well until all ingredients are evenly combined
Add the beaten egg to the mixture and mix again until it's fully incorporated
Form the mixture into small meatballs, about 1-2 inches in diameter
Heat a skillet over medium-high heat and add coconut oil to coat the bottom
